In Numbers how do I remove the "CA" symbol in a cell for currency

Is it displaying as CA$. If so, go to the Data Format dropdown under the Cell tab and change the Data Format from Currency to Number.

If it CA (perhaps in data you have imported) then you should change that at the source. Or a script might do the job.
