How can I upload a gift card to Apple Wallet?

Depends on the type of Gift card. Loyalty cards are usually added from the issuer's app, an email with a link or a QR code. They cannot be added directly within the Wallet app.
If the gift card acts like a traditional Visa per Mastercard debit card it can be added as such by tapping on the (+) icon at the top, and selecting the "Debit or Credit card" option.
