How can I make the cursor move right instead of down in Numbers?
I just want to hit return and the cursor to go to the column on the right...not down the row like it does now

The answer is No. Not since Numbers '09.
Use the tab key to advance to the next column. Use the return key to start in the row below the cell where you started. Numbers remembers your input pattern.

You waited two hours before giving up? OK...
As Yellowbox points out, tab is the appropriate key for moving across a spreadsheet. I think that's pretty universal.
Assuming you did have return go across, how would you propose moving down the spreadsheet? Just curious.
If it really bothers you, there are options to override keyboard settings that may let you remap return-to-tab, but I can think of other use cases where that would really get in the way.
