iPhone will not record video when CarPlay is being used. If I shut down the car’s display, video recording works fine.

You can go into the settings of the car where your device connections settings are found and delete the device there - you can re-set it up once you've got what you need to document your braking issue.
Also you can go into Settings/bluetooth and select your vehicle in the list of devices and once on that device settings page select "forget this device." Best to do this while you are in the car because the "car" may not show up as a device in your phone if you are not close enough.
It is easy enough to go through the reconnect process. Only a minor pain to do the reconnect. I have left mine disconnected until the dealership has addressed the issue with my car so that I have multiple videos documenting the same behavior.

This advice will NOT help the Author, who wants to recored video while connected to CarPlay.
Unplug or disconnect from CarPlay, since you've already arrived at your home, then record what you want to record. When connected to CarPlay, I would fully expect the phone to not record.
When your phone is connected to your car in CarPlay, Video recording isn't an available option. There's no video app associated with CarPlay and I'm quite sure Apple wouldn't want you recording videos while driving your car. Just like you can't watch a video when connected to CarPlay. What exactly are you trying to record while behind the wheel of your car?
Trying to record the display on the dashboard as I pull into my garage. Sometimes the auto stop comes on but most of the times it doesn’t. Trying to create a record I can take to my service technician to show them that I am not making this up. I can record if I shut down the main center display.
Sometimes I use the phone as a dash cam to record drives through the country. Recently I’ve had to record what’s happening on my dashboard to show the issues I’ve been having to the dealership. There has to be a way to override this other than just disconnecting the phone from CarPlay… is there an off/on toggle switch for CarPlay so that I don’t have to keep disconnecting my phone from the system?
I can’t figure out how to disconnect as my CarPlay connects wirelessly. I too want to record what the dash is showing as I pull into my garage and the car sometimes brakes on its own and sometimes doesn’t. I settled for just using my spouse’s iPhone.
In the Settings App on your iPhone, you can tap General > CarPlay > Tap Your car then toggle off CarPlay. Or if you're using CarPlay wired, just unplug your phone from your car.
