Why are the app user license agreements on my iPhone all open source or oddly worded

Check out the language in this usage agreement. This is just one of many examples. If I’m not mistaken don’t these things usually say something that’s basically the entirely opposite of what is being described here? How can I freely use the software for stuff like this without owning it or even paying a royalty or anything at all?
