Since the terrible update to the PHOTOS at the end of last year, now when I go in to one of my photo albums, it keeps automatically moving from one photo, to the next, to the next HOW do i fix THIS from NOT HAPPENING AGAIN HEEEEEL P

In albums and some collections you can turn off the preview movie by going to the sort menu at the bottom, and choosing View Options
and then unchecking "Movie Preview."
You can also stop it all by going to Settings>Apps>Photos and turning off "Show Featured Content" an/or "Auto-Play Motion."
There's so much opportunity to customize your experience in this iOS. If you don't like having all these new choices, perhaps you could get someone to help you turn off the ones you don't like, turn on the ones you find useful, and put your preferred views up front for you.
As you have seen it is easy to stop those if you do not want them. That is what makes this Photos app far superior than the others as there are many more options that you have never had before. This satisfies the users who wanted more features and also those you don't by being able to turn it off.
