How to disable shuffle for audiobooks on my iPhone?

I play a lot of audiobooks that I have loaded onto my phone and put into playlists. When playing them, the "Shuffle" function sometimes turns on, which, with a book, is inconvenient. Obviously I can press "Shuffle" to turn it off, but if I happen to be driving, that is not always easy or safe. I would like to be able to tell before starting that "Shuffle" is off. Unfortunately, on my phone, "Shuffle" is red no matter what. I push it and the color doesn't change, so I have to listen for a bit and see if it goes to the next chapter or jumps around - sometimes to another book. Any ideas?
