My iMac had a upgrade this morning and in the photos library - under edit - the opinion to "Write out" background objects is gone

By "Write out" do you mean the Clean Up tool? Did you see this before the upgrade? I ask because Clean Up is not available everywhere, and it works only on Macs with M1 chips and up.
Requirements to use Clean Up in Photos - Apple Support
If you've seen it on your Mac before, go to System Settings>Apple Intelligence & Siri", turn on Apple Intelligence using the button.
If that's already turned on, then you may have to wait a while for the AI stuff to load.
Let us know what happens…

Perhaps you had something different-- Clean Up was first offered with macOS 15.1. It appears as a separate option in Edit mode, like this:
