is there a way to edit the autofill suggestion pop up in Numbers or only toggle it off?
It suggests things I no longer use.
Or can I copy the whole sheet into a new sheet and lose old suggestion pop up that way?

Autofill is a list of all the entries already present in the column. You cannot edit it except by removing entries from the column. You can turn it off in Numbers->Settings-> "Show suggestions when editing table cells".
