How can I enable 'Tap to Resume' feature on Apple Watch Ultra 3 Workout app?

I recently moved up to the very awesome Apple Watch Ultra3 from my long loved but battery challenged Apple Watch Series 6.

One feature I used to have and used a lot on the S6 was the "tap to resume" when I was in middle of a workout. This was very convenient in that I only had to do the "tap" gesture on the hand with the watch to resume a workout.

I don't see this gesture on the new Ultra3. Is there a way to enable this feature for the workout app?
