Activity rings show 'paused' and go grey at the end of each day, despite never pausing them

Activity rings say paused, even though I didn’t pause them, and cannot unpause.

For 2 weeks, I’ll have activity rings during the day, but as soon as midnight hits, the rings turn grey and say paused for the day. Both my watch and activity app does not have the pause enabled, but in my Health app it says rings are paused, and the fitness widget on the Home Screen shows active rings but no 'nnumbers' on the move/stand/exercise' part. I’ve seen a genius, who said they had 'never seen it before' (despite several threads like this on here with no solution', I have reset both my watch and phone, done a total factory reset on phone and set up as new (incl having to manually add all my apps again), and disconnected and re-set up my watch. Nothing seems to work - as soon as it all connects, the rings go grey on my watch face, and there's no data after midnight in the fitness app. Its driving me CRAZY. Any ideas?
