I can’t update some of my apps because they’re attached to his Apple ID and it’s really annoying asking him what his ID is just so I can do that frequently. How do I change the Apple ID on specific apps?

You need to delete any apps that were downloaded with his Apple ID and redownload them with yours.
It appears at some point his Apple ID was signed in to this device for some unknown reason under Settings ➜ Account ➜ Media & Purchases
