Turn off Dictation (stops ALL voice-to-text)

If you want voice-to-text permanently disabled:

  1. Open Settings
  2. Go to General → Keyboard
  3. Turn OFF:
    • Enable Dictation
    • Dictation with Apple Intelligence (if shown)

This immediately stops the iPad from converting speech to text anywhere (Mail, Word, Excel, Messages, Notes, etc.).

When you say that you're "writing email...." do you mean that you are actually typing, but you're still seeing random words? That doesn't sound like voice-to-text.
