How to get iOS v18.7.3 instead of v26.2 on old iPhones (11 Pro Max, 12 mini, and 13)? V18 is stable and fine now. Don't want the new features and slow downs from v26.

You can’t. Apple has cut off the ability for iPhones that can run iOS 26 to receive further iOS 18 updates.
Only the iPhone XR, XS, and XS Max (for which iOS 18 is the end of the line) can get the 18.7.3 update.
