I'm new to FCP, I have a clip that I pulled from a dash cam, it has the date and time in the bottom right corner on the black bar, what is the best way to remove this or cover it up?

There are several masking techniques but the quickest and simplest way is to use the Transform Tool to scale up the image by around 5% and reposition it slightly.
The only disadvantage is that you will lose a bit of the image around the edges but normally that will not matter.
The whole process should take a few seconds.
EDIT: I posted before seeing Ian's reply. You may want to try his suggestion first.
Here are two simple solutions:
A) cover it with a generator
A1) Drag a generator from the Solids category, and place it above your clip in the timeline
A2) Use the Trim tool to adjust the size of the generator
B) Blur it
B1) Drag an effect from the Blur category
B2) Add a Mask to limit the effect to only the area you want
Let's say you enlarge it 10% and the info disappears from the bottom . . . you can then reduce it to about 5% and drag the image down.
This way you will be minimising the enlargement and wastage of image.
