How to remove formatting options from within a plain text message

We always write and reply in plain text, so we never want to see formatting options. However, on one of our computers--not both of them--after upgrading to Tahoe, a formatting bar started to appar inside the text field of every new plain-text message. The default message is in plain text but we cannot figure out how to stop the options from appearing. What is the magical incantation?

I was thinking the Messages app.

That is why it is always best when people can supply specific details such as the exact app involved, or exact computer, or exact OS, etc.

Kudos to @Luis Sequeira1 for realizing the proper app, and @neuroanatomist for the solution. Teamwork at its best.
