is it normal that the battery health degrade to 99% after only one month to my new iphone 11?

Yes. Not unusual and not necessarily a sign of anything wrong. The nominal rating of all current iPhone batteries is for 500 cycles to 80% battery health. Simplfied to a linear decline, that's a 1% drop after 25 charge-discharge cycles. Now there's no specific way it's supposed to decline, but down to 99% after a month is typical.
