I want to print a book of my drawings, and I don't want portrait or landscape format, but square, so that either horizontal or vertical images will fit. I don't know whether I should use Pages or some other app, or the Custom Page Size and book printing features of my printer driver. Ideas, anyone?

You can set a custom paper size in Pages.
Menu > File > Page Setup
Then in the Inspector, you can choose Facing Pages and set inside and outside margins (for binding)
