What does "restoring your phone from a back up will overwrite everything currently on the device" mean?

That means that the restoration from the backup process will first wipe everything clean currently on your iPhone and replace those contents with the information from your backup file. In the end, your iPhone will be returned to the status as it was on the day and time when that backup file was created.
