Your Apple Device CANNOT be hacked BUT if you jailbreak, download files etc. that is not verified by Apple, you can get hacked and if you jailbreak, your apple device is no longer an apple device.

As noted, a non-jailbroken phone cannot be hacked. You are doing the right thing to only use apps from the App Store. You cannot be hacked through photos. The echo you hear happens with the phone sometimes. I have had that on my phone. Just try to ignore it.
