Is it no longer possible to buy individual songs? Are we now forced to get a subscription?

You can still buy songs. You just have to ignore all the nudging about a subscription. Carefully follow the steps in the "buy" section of this guide:
Add and download music from Apple Music or buy music from the iTunes Store - Apple Support
By the way, if you are using a Mac with Catalina, the iTunes Store is hidden by default, until you enable "Show -- iTunes Store" in Preferences, as shown below.
