If I taken any plan for a month, and not recharging for the next months, will my data will be deleted be Apple or I can get it once I do the recharge.

If you upgrade iCloud storage for one month and then you downgrade, you will receive an email stating that you have 30 days to retrieve your data or it will be removed down to the point of the 5GB free storage that you automatically receive from Apple.
