The email in apple pay is not my current email. I looked and do not see the old email anywhere in my set up. How do I find the wrong email and fix it?

I bought something with Apple Pay. The email that showed up under my "Billed To" section of the invoice is an old email. how do I find and fix this?

When you go to settings>Wallet & Apple Pay>transaction defaults>email - is it correct there?
