Can I upgrade my mac mini server 2012 with 2 1TB SSDs?

Yes, but you could loose the Server function if you install the SSDs and just reinstall macOS on them..
Your best bet to preserve what you have, is to clone the HDDs to the SSDs before switching them out.
FWIW it is agonist the "ASC Terms of Use" to encourage, post or share DIY links here and they will get removed.
