So every time I type my phone speaks, for example like if I type the letter h it says hotel and j say Juliet, I’ve tried everything to turn it off and it won’t work

Looks like Voice Control is On.

Go to -> Settings -> Accessibility -> Speak Auto-Text -> Off.
