How can I delete files from my iPhone using this new “finder” dashboard they introduced with Catalina. This article says I can remove files but there isn’t a REMOVE button anywhere. Please help

It's the same as it was when the iTunes app was used to sync. You remove previously synced content from the phone by syncing again but not including that previously synced content in the selection of what you want to sync.
