Guided access options not clickable

I use guided access to limit my toddler to be able to touch the screen for grand parent FaceTime.

yesterday it worked just fine, today all of a sudden he is turning off FaceTime and stopping videos. I try to check the settings of guided access and turn off touch screen and I can’t touch the options and I can only disable half of the screen by drawing on it.

was their and update that happened overnight? This has happened on both my wife and i’s 13 pro and 13 pro max.
