My mother has big print on her Mac Book. When she tries to check out using Apple Pay, the screen that comes up shows all the details of the transaction but the bottom is cut off and so she cannot finalize the payment.

Have her reduce the font size then, or if using a web browser, try zooming out to reveal the rest of the screen.
View Menu ➜ Zoom Out.
She needs to set the text size back to normal. Some websites do better than others and some browsers do better as well. Unfortunately, there is no simple answer to your mother’s situation.
