I have an old AirTag, but the Find My app doesn’t recognize it therefore can’t be added. I did reset it by taking battery out five times but still no avail. Is it simply dead or anyone has any idea what I can do?

Firstly, was the AirTag originally associated with your Apple Account? If not, it has to be removed from the previous owner's account before you can use the steps you have outlined. This is Apple's advice at the head of the support document How to reset your AirTag.
Secondly, could the battery in the AirTag be depleted? Have you tried the reset steps with a fresh battery?
