Setting up a Mac mini using non-Apple keyboards/mice

I've heard that problems could occur when trying to set up a Mac mini with a non-Apple keyboard and mouse.

How does the setup work if I have non-Apple keyboards with Bluetooth? Does the Mac mini automatically recognize that there is a keyboard in pairing mode nearby which it will connect to or is a Apple Keyboard necessary to complete the initial setup?

The easiest was to use any wired keyboard and mouse for set up. Then you can pair Bluetooth devices easily. Using non Apple hardware may not pair when initially setting up. I have also used Apple hardware and it does not pair up when setting up a new Mac occasionally.
