I think perhaps you're misunderstanding what that is. Those settings are what will appear in the Share menu for an app, such as Photos, so if you want to send an item to someone from an app, you can see the various methods; Mail, Messages, etc. See:

They're not meaning that Mail or Messages, for instance, will be shared with anyone else. Apple assumes, probably rightly, that at least Mail, Messages and Airdrop will always be options that a user will want to have available when you want to send something quickly from within another app.
