How to manage video and music playback for Autistic Kids?

I have Grandchildren that I watch for weeks at a time. And I noticed when they’re watching videos or listening to music on their iPhones they are repeatedly repeating the back button for a three second burst of a song which causes them to be more stimulated. Is there a setting or function that I could prevent them once they’re listening to something to complete it which would help on the stimulation?

No means in the existing tools. And Apple Assistive Access doesn't presently include a playback app.

Options include finding and installing a playback app that doesn't have the control, or that has a locking control, or moving the control device out of reach.

For that lattermost case, using AirPlay to an Apple TV (or some other TV with AirPlay support) (with no accessible controls) from an iPhone or iPad or Mac device that the people don't control might be another option. Basically, using the AirPlay target as a projection movie screen.
