I previously had a subscription to apple music via g mail, but since I permanently deleted my g mail, I am still being charged every month

Cancel the Apple Music subscription here. It makes no difference that you deleted the email address from Gmail, it is only used as a User Name and does not need to be active. You will still need the Password for that Apple ID that was used for Apple Music.
