I wear my Apple Watch 6 while sleeping and set the display to “Always Off”. My Apple Watch Ultra is for daytime wear I set it to “Always On”, but it also changes my aWatch6 to Always On. How do I make those settings independently so those specific settings don’t mirror each other?

Did you try to disable Always On directly on your Series 6 in Settings/Display&Brightness -> Always On -> Off?
