Apple product recommendations for a long-time user

I have had every apple from APPLE Graphics and Sound to the IIC, LC, colored iMacs, to mac laptop. I've had pods watches and Pads. So just for example the I pad Mini with wifi and phone was a dog. I'm looking for the sweet spot. I don't need new and I would like one that owners love more than their upgrade. I don't want it to Apple updated into oblivion or newer apps bog it down. So M 1, 2, 3? pro or air? 13 or 16”, Are the all intel based? 2020, 2022, 2024. I'm deffenitly looking to step over any dogs that everybody but me know what model, size, features or years are no-go’s or a feature that isn't worth it? I know I'm asking a lot but just trying not to step in the poo! Should I buy from Apple refurb and save$ but a chunky applecare+? Just need direction. N, S, E or West??
