Yeah, I think this was badly handled by Apple - "30 New Functions!" but we're not going to tell you what they are 😛
Most of the functions I've found relate to either arrays or LAMBDA functions (which basically let you write your own function within a cell).
Here's what I've come up with so far, based on walking through the Functions list and recognizing something new:
Logical & Info:

LAMBDA()
LAMBDA.APPLY()

Numeric:
RANDARRAY()
Reference:

That's only 26, though, so I've probably missed something :)
Oh, I missed the matrix-related functions:
Numeric:
MDETERM()
MINVERSE()
MMULT()
MUNIT()
SEQUENCE()
and:

TEXTSPLIT()
I think ISOWEEKNUM is also new (though it might have been there in previous versions.).

how am I supposed to try and embrace these new functions if I don’t know which ones they are?
