Sometimes, I have my hands elbow deep in dishwater, mud, pastry and flour, etc. I’d like to ask Siri to answer my phone when it rings, then put the call on speaker so I can have a conversation without stopping my previous activity. Is this possible?

Sure- Siri will even announce the caller's identity so you don't have to try and get a look at the screen. Open Settings > Siri > Announce Calls and change it to 'Always'- do note that Siri won't announce the call if your phone's on silent.
