What is this icon?
When I record a voice message, this app uses my microphone. I've never seen such an icon, and now I'm even wondering where it came from.
Moreover, it is displayed only when I am in the Airpods (or it was not displayed for other reasons)

Wondering iif you are recording the voice message in the Messages app, or in the Voice Memos app, or ?
Apple's own Icons have been updated to a "Liquid Glass" theme, which you can customise if you wish.
Else, if you are concerned about microphone use:
Try going to Settings > Privacy and Security (scroll right down) > Microphone ,,, you can check which
third-party (non-Apple) apps have access to your Microphone ... and allow or deny access to any app.
You can also check in Settings > Apps > Safari > Microphone (scroll right down):
