I followed instructions provided in Delete apps from your Apple Watch - Apple Support.
When in grid view -- all apps giggle but the "x" to delete is not displayed.
When in list view -- unable to swipe left doesn't
How can I enable the above function?

I had the same issue and screen time enabled. I turned off screen time and was able to remove apps from my watch. What does screen time have to do with it and why can I not find that nugget of information anywhere? Thanks for mentioning it!!!

Some built-in apps cannot be deleted and others can only be deleted using the Watch app on the paired iPhone.

Did turning off screen time work for you?
Do you have screen time enabled on your phone?.
Screen time includes the watch when certain restrictions are enabled.
