The family of DUR2 function will convert from the Numbers duration data format (which Excel does not have) to decimal values that you can use for further calculations in your document.

For you specific question DUR2HOURS will give you what you want.
With 6h 9m in cell C2, and a desired result of 6.15 you would use =DUR2HOURS(C2).
For "date math" where you are calculating the difference between two points in time you simply subtract one Date & Time from another. Easier than Excel. Then use one of the DUR2... to convert to decimal if you need to do other calculations.

No need to convert to decimal time. Numbers will happily do the arithmetic using Durations.

Use the function DURTOMINUTES() - to convert the duration to minutes - and divide by 60 - to convert to decimal hours.
For instance, if your duration is in cell A1, use the formula:
DURTOMINUTES(A1)/60
