Apple Pay shares Apple ID details with payment systems

It turns out when you are adding some card to pay with Apple Pay you Apple ID information becomes a default information for Apple Pay transactions - so the sites which could work with Apple Pay starts sharing this information for everyone. Since I started using Apple Pay I started receiving tons of emails from everywhere to my Apple ID email address. I do not use this email address anywhere except to access Apple Services. I think it is because this email was set as a transaction details email address by default. Also there were my address and other information. So I go to Wallet and delete all those details. But it is not clear and the users do not know about this. Does somebody have any information about it?
