I occasionally have the task of trimming a video by timecode. Videos are two hours long and I feel uncomfortable when I need to edit/delete a certain piece, because the video timings shift in time. Is there any way to edit the video and see the original and current timings?

I usually do the same as Luis and Tom when working with timecode edits--first duplicate the project as a snapshot for reference and piece of mind, then working in the original project, start making your edits from the end of the timeline and work toward the beginning.
You could make a duplicate as snapshot of the project and open it. You can then switch back and forth between the two in the timeline. Not as good as having two open timelines obviously.
I don't know if that is an option in your case, but if you can work backwards from the end, the previous timecodes will not have been changed.
